Fork Tender Steak Marsala

Ingredients:

About ½ cup Marsala wine. (More used for cooking later)
1 tbs honey
2 tbs (a shake) of a thick teriyaki sauce. (I used Kikkoman garlic flavor)
2 or 3 cherry tomatoes, chopped and seeded (if you like, seeds never got in my way!)
1 tbs of balsamic vinaigrette dressing (can be omitted)
Two large spoonfuls sun-dried tomato paste (To taste)
½ cup chopped celery and onion. (Don’t need celery, but it worked well)
1 clove chopped garlic (to taste)
Olive oil, Extra Virgin. (To taste)

Spices:

Sweet basil, pepper (black coarse ground), and Ms. Dash (I do believe) “extra spicy” blend. Crushed red pepper, if you can’t find it.

Marinade instructions:
----------------------------
Mix wine, honey, teriyaki, and dressing together in a Tupperware container with a lid. Heat briefly with the microwave to melt honey, and stir well. Add chopped tomato and steak. Cover, and I like to shake the crap out of it. Its fun, good exercise and I think it helps.
Let sit in the refrigerator for 8 hours for best flavor.
Allow meat and marinade to sit out a half hour before cooking to become room temperature.

Cooking Instructions:

Pre-heat pan, then coat with olive oil. Add wine so that the liquid in the pan totals up to about ½ inch deep. Add onion, celery and garlic, stir well.
Add steak, and bring the sauce to a boil, and then turn down heat to reduce to a simmer. Let cook for approx 15 minutes or until halfway done (to taste)
Now add spices to your liking, stirring constantly and making sure to coat meat. Sauce should now be reducing a little, becoming thicker.
Add 2 large, heaping tablespoons of sun dried tomato paste (to your tastes) and stir well to coat vegetables and steak.
Now that sauce is reducing, adjust heat accordingly so it doesn’t scald, and stir often. Simmer until the meat is done as you like.

Just place the meat onto a plate, and top with the “relish”. Add garlic bread, and you got a meal
